Levisticum officinale
This is a very large, erect herbaceous perennial, with leaves which look and smell like celery. It produces yellow flowers in the summer. It should be planted in sun or partial shade and as it is a prolific self-seeder, seedlings should be weeded out unless there is plenty of space for more plants.
All parts of the plant are useful – dried leaves for tea, their stalks can be candied like angelica or blanched and used as a vegetable, young leaves can be used in salads, soups, stews and potato dishes, and the roots can either be cooked as a vegetable or grated and eaten raw – nothing need to go to waste!
Height 1.8-2.5m (5.5-8ft), spread 1m (3 1/3ft).
