Red Orach
Atriplex hortensis Rubra
This is otherwise known a Mountain Spinach and was grown in ancient times before spinach. In hot summers it is preferable to grow to spinach as, unlike spinach, it is unlikely to bolt. The attractive red leaves on red stems can be eaten raw in salads when young or steamed like spinach when older. The seeds are edible or can be used to make blue dye. This variety self-seeds readily. Grow in partial shade in rich soil.
