An erect, perennial plant in the celery family, with fern-like, bright green leaves and umbels of small white flowers in early summer which are followed by spindle shaped, aniseed-scented fruits. All parts of this plant can be eaten. The chopped fresh leaves can be added to salads, soup or omelettes, or they can be used as a zero-caloric replacement for sugar, or they can be steamed and eaten like spinach. The stalks can be used as celery and the roots boiled or eaten raw.

The flowers which are rich in nectar are valuable to bees. If seedlings are not wanted, remove the seed heads before they ripen as ripe seeds germinate readily.
